This will become a FAVORITE in your house, as it is in mine! We call this “Christmas Eve Casserole” because it’s a tradition for us to eat this on Christmas Eve…but we make it much more often than once a year! The coolest thing about this recipe is how interchangeable it is. You can change the meat, cheese, soup and even add whatever else you want to it! I ALWAYS double this recipe, because we love the leftovers. They freeze really well for quick microwaving later, too.
Cook broccoli, drain and place in bottom of casserole dish. Place cooked, cubed chicken on top of broccoli. Combine soup, lemon juice, sour cream and mayo. You may prefer it with a bit more lemon juice – but it’s up to you! Pour over the top of the chicken. Cover with cheese, then Stove Top. DO NOT make the stuffing – put it on the casserole DRY, right out of the box.
Bake at 350 for 45 minutes, COVERED. Uncover and bake until bread crumbs are as crunchy as you want. This can take up to another 30 minutes.
