Here’s an amazingly easy recipe for a chocolate bundt cake, with something special! Lemon and chocolate really compliment each other, when done right. And this, friends, is done RIGHT! It’s ridiculously moist, and super flavorful. Even the novice baker will find this recipe quick, easy and one of their favorites.
Chocolate cake mix
1 package of instant chocolate pudding (3 oz.)
1 c. sour cream
1/2 c. water
1/2 c. oil
3 tablespoons butter, melted
2 teaspoons of lemon zest
1/3 cup fresh lemon juice, about 2 meduim lemons
3 cups confectioners sugar
Preheat oven to 350°F.
Mix ingredients pour into a well greased and floured bundt pan. Bake for 1 hour or unitl toothpick inserted (the bundt cake pan is deep so I used a bamboo skewer) in center comes out clean. Remove and let cool. Carefully transfer to your cake serving platter.
Mix ingredients in a medium bowl. If desired, add additional lemon juice, zest or sugar to taste. Glaze will thiken while it sits. Optionally you can poke holes on top of cake with a chopstick to allow glaze to seep into cake deeper.
